meatless spaghetti sauce

1Cook the noodles according to package, drain. (I like to add a lil EVOO to noodles while they cool so they don't stick together). Combine the ricotta, cottage cheese, whisked eggs, oregano, and basil. Lay noodles out flat, spread mixture over each noodles to within 1/2 inch of edge. Top with 3 pepperoni slices and Swiss cheese, carefully roll up.
2Place seam down in a greased shallow baking dish. Meanwhile, in a large skillet, cook ground beef and sausage til no longer pink, drain. Top rolls with meat mixture and spaghetti sauce. cover and bake at 350 degrees for 20-25 minutes. Sprinkle w parmesan. Let stand for 5 minutes before serving. Enjoy...
