Lentil Soup w/ Coriander

This is a very thick soup, kind of like a stew, it's great when the weather starts to get cold! I found the recipe on the back of a pkg of Dried Lentils, years ago, and put my own spin on it.

Ingredients

1 c
dried lentils
1/3 c
peal barley
1 lb
italian sausage, or jimmy dean or your favorite type w/o casings
1 tsp
coriander
1 1/2 tsp
poultry seasoning (1&1/2 tsp)
1 Tbsp
granulated onion
1 Tbsp
granulated garlic
1/2 tsp
dried powdered ginger
1-2 tsp
sage
1 Tbsp
trader joe's 21 spice blend

celery, sliced
2
carrots, sliced
2
onions, chopped
1 sprig(s)
fresh rosemary, remove before serving

bay leaves

tomatoes, chopped
1/2 - 1 tsp
basil, fresh
1/2
head of cabbage, sliced thin
1 c
spinach, fresh, sliced thin
4 can(s)
chicken broth
sour cream

Step-By-Step

1Examine & sort LENTILS, and BARLEY. Rinse well in cold water. Set aside.
2Chop ONIONS, CELERY, GARLIC, CARROTS,
3Place Sausage in frying pan, add POULTRY SEASONING, CORIANDER, mix well, and add chopped ONIONS, CELERY, GARLIC, & CARROTS, cook until browned. POUR OFF EXCESS OIL.
4Add CHICKEN BROTH, LENTILS, BARLEY, BAY LEAVES & ROSEMARY SPRIG .. Bring to a boil. Then reduce heat & simmer about 1 & 1/2 --- 2 hours until LENTILS are tender. Taste, and adjust seasonings. Add Granulated ONION, & Granulated GARLIC & Trader Joes 21 Spice Blend.
5During last 15 minutes of cooking: REMOVE BAY LEAVES, and SPRIG of ROSEMARY
Add TOMATOES, SPINACH, & CABBAGE
6Serve in bowls, top with sour cream.
7I make beer bread or corn bread to serve with this
