Ingredients

8 oz
egg noodles
1 Tbsp
olive oil
1 lb
pork sausage
1 medium
onion diced
1 small
jar pimentos
3 Tbsp
hungarian paprika
1 c
chicken broth
2 c
fresh spinach leaves
2 c
sour cream
salt and pepper to taste
3 Tbsp
fresh parsley chopped

Step-By-Step

1Cook the noodles in salted boiling water drain and set aside. Meanwhile add the oil to a large skillet. Add the sausage and onion cook breaking it up until no longer pink.

2Add the pilmentos, paprika, and chicken broth. Bring to a low boil. Add the spinach and let wilt. Stir in the sour cream . Season with salt and pepper. Serve over noodles garnished with parsley
