Ham Stuffed Baked Potatoes

One of our family favorites for many years. Great for using up left over ham.

Serves:

4 people or depending on how many potatoes you cook and how much ham you use

Ingredients

4 large
baking potatoes
2 c
fully cooked ham, ground
1 c
mayonnaise or miracle whip
1/2 c
swiss cheese, grated
1 small
green bell pepper, diced
1 small
jar of sliced pimientos
2 Tbsp
minced onion
1/4 c
mild cheddar cheese, grated

Directions Step-By-Step

Scrub potatoes; bake at 425 degrees for 45-60 minutes or until done. Cut a slice from the top of each potato and scoop out the inside and cube.

Toss the cubed potato with the ham and next 5 ingredients; spoon mixture back into potato shells.

Bake at 425 degrees for 15-20 minutes. Sprinkle cheddar cheese on top and heat 1-2 minutes more or until cheese melts.
