EVERY TIME I COOK MY TACOS ( flautas ) MY DAUGHTER ASK ME TO COOK THIS KIND OF BEANS, SHE POURS THE BEANS OVER THE FLAUTAS...SHE IS KIND OF FUNNY WITH THE FOOD.

Ingredients

1/2 lb
dry pinto beans
1/2 lb
mexican chorizo or chorizo espanol
1/4 lb
bacon
1/2 large
chopped onion
1 OR 2 medium
jalapeno peppers sedded
1/4 bunch
fresh cilantro
1/4 lb
ham strips
1 c
pork rinds

Step-By-Step

1THE NIGHT BEFORE RINSE AND SOAK THE PINTO BEANS WITH SOME CUMMIN SEEDS AND GARLIC.NEXT MORNING IN THAT WATER BOIL FOR ABOUT HALF HOUR THE BEANS. DRAIN THE BEANS AND ADD FRESH WATER AND COOK THEM UNTIL TENDER.. THE REASON I COOK THE BEANS IN THAT WAY, IS BECAUSE YOU DONT GET ANY GAS AT ALL
2FRY THE BACON AND WHEN STARTS GETING CRISP ADD THE CHORIZO, I LIKE MORE THE ESPANOL CHORIZO, THIS KIND OF CHORIZO U CAN ALWAYS LOOK IN THE ETHNIC STORES.WHEN BOTH ARE VERY CRISP, ADD THE HAM AND THE REST OF INGREDIENTS ( not the pork rind s)THEN ADD THE BEANS, AND LET THEM BOIL FOR ABOUT 20 MINUTES.
3SERVE YOUR BEANS AND ADD A FEW PORK RINDS TO GIVE THEM A CRUNCH....
