    Colleen, the brown sugar reduces the acidity of the tomatoes, not to mention the sauerkraut. It's good! :-)

    Baking soda will reduce acidity in terms of the PH balance in a tomato dish (for those with sensitive tummies). Adding sugar will balance the acidic flavor. I always add brown or white sugar to my recipes with cooked tomatoes. I guess it's just personal preference. :-)
