1 Tbsp olive oil, extra virgin
3 - 4 lb boneless pork sirloin roast, netting or string removed

1/4 c water
1 pkg taco seasoning mix
1 - 4.5 oz can(s) green chiles, undrained
cheddar cheese, shredded
salsa
tomato, diced
cilantro, fresh, chopped
limes, quartered
sour cream
16 - 6 flour tortillas

Directions

Cut pork tenderloin into slices, then into bite sized pieces.

In crock pot, place pork. Add oil, water, taco seasoning, french onion soup mix; mix well.

Cover & cook on LOW for 7 - 8 hours.

Place cheese & salsa in separate serving bowls. On serving platter, arrange cheese, salsa, tomato, cilantro & lime pieces. Warm tortillas as directed on package. Spoon pork onto tortillas, using slotted spoon; top with cheese, tomato, cilantro, sour cream & salsa. Squeeze lime juice over fillings. Fold tortillas in 1/2 over filling.

NOTE: To save a step...you can stir the lime juice & cilantro into the sour cream & refrigerate 1 hour. for flavors to marry

It was a hit with my family! My 6 year old son is very hard to please and he even had seconds! Thank you so much for sharing this recipe and finding something else my little man will eat too!

Kimmi, your recipe directions calls for french onion soup mix in section 2 along with the taco seasoning. Your ingredients list does not reflect the french onion soup mix. Is this a packaged french onion soup mix similar to Lipton Onion soup mixes? Is there any particular brand that you use?

I did fix that, but they haven't updated it yet. I hate this new way, why can't it update automatically anymore? UGH!

Yes it is the dry onion soup mix (used for like french onion dip, soup etc.). You add it in when you add the taco seasoning. I just used the store brand to save money, but you can use any.

Thank you so much for the update on the recipe. I am very excited to try this recipe. This looks very similar to the one I used to make when I lived in Colorado. I also make chili rellenos where I wrap sharp cheddar cheese and whole chili peppers in egg roll wraps and deep fry them, then pour the green chili over the top and add lettuce, tomatoes and sour cream. My husband loves them. So I am very eager to try this recipe this weekend. Thanks again.
