Jennifer's Notes:

My kids LOVE this recipe. It's a flavorful recipe...both sweet and a little spicy.

Comments from the Test Kitchen: Kitchen Crew

When this dish finishes cooking the meat is so tender that it separates with just a rubber spatula.  Simply wonderful!

There's definitely room in this recipe to make your own mark in terms of seasoning. From Jennifer's flavor suggestions I used 1 teaspoon each of Creole seasoning, Italian Seasoning and pepper. Feel free to use the combination that your family enjoys most!

I fixed this and it was absolutely wonderful!!! I did add some very thinly sliced onions and 2 cloves of garlic with the carrots instead of using the salts. I browned the loin on all sides on the stove top in a little olive oil then cooked in a dutch oven @325 for 2 1/2 hours and everything was tender and juicy. After I removed the pork and vegetables, I used 2Tbl. flour to thicken the cooking juices and it made an excellent gravy for the meat. This was a big hit with my family and I will definitely be making again. I think I will try it in the crockpot and then shred for sandwiches for SuperBowl Sunday.

I made this last night and served it with garlic mashed potatoes. The pork roast was amazing and the carrots cooked to perfection. My daughter (very picky eater) went back for seconds. Thanks for sharing.

This also works well with pre cooked ham and coke, I have been doing this for years with ham and my kids call it dirty ham (because the front part of the ham without the skin turns dark from the coke or dr.pepper). Its a big hit at work when I take it for ham and biscuit breakfast events.

Could this be done with chicken, possibly? We don't eat pork products of any kind, and rarely eat beef. I was thinking it might taste a bit like a sweet/sour chicken? Funny that I'm asking--I haven't even gotten my crock pot, yet!

Trying this tonight! It's in the oven now... (Smaller tenderloin, minus the carrots) I didn't have time for the crock-pot version. I'm thinking rice & some veggies for sides... Thanks for sharing Jennifer!!!
