NOTE:
As for the jalapeno & habanero peppers go if you want them milder use only 1, if you want them with more heat, add 2 of each pepper.

Remembering that the seeds and vein has the heat. And never rub your eyes until you have washed your hands…

Also the longer you let the onion, garlic and herbs marinate in the apple juice the better they will taste. I marinated them for 1 hour, on the counter.

2 jalapeno peppers chopped
1 small roasted red pepper chopped

Step-By-Step

3Soak the parsley, basil and oregano in 2 tablespoons apple juice
4Remove the casings from the brats.
5Beat the egg + yolk’s in a bowl.
6Add the salt, pepper and hot peppers, mix again. Set aside.
7Mix the bread crumbs with the oil and add to the egg mixture.
8Peel the apple and cut into small bite size pieces and add the apple into the egg mixture, add the onion, garlic & herbs along with the apple juice that they were soaked in. Mix well with your hands.
9Add the brat meat to this mixture and mix thoroughly.
10At this point you’ll want to start to add the additional ¾ cup of bread crumbs ¼ cup at a time and mix thoroughly. If you think you will need the additional bread crumbs add the rest and mix again.
11Cover and refrigerate for at least 1 hour.
12Form into patties and grille or fry….fry????? Oh no no no…grille them….
13TO MAKE THE RELISH:
14Drain the juice from the sliced pineapples, into a bowl making sure not to break the pineapple slices, put slices in a bowl and refrigerate.
15In the bowl with the juice add 1 tablespoon light brown sugar and mix till it is dissolved.
16Chop the green onions and add to the juice.
17Chop the jalapeno peppers “ keep the seeds in if you want it hotter”. Add to the juice.
18Chop the roasted red pepper and add to the juice.
19Let the relish sit in the refrigerator for at least 1 hour to marinate
20After that time, carefully put the pineapple slices in the relish and refrigerate for additional hour.
21When you are ready to serve, carefully remove the pineapple slices to a plate, drain the relish from the juice “ do not throw out the juice, freeze it for another use” and top the pineapple slices with the relish.
22Serve either on top of the brat burgers or on the side.
