2large carrots,diced

1red onion,chopped
-
1 Tbspmargarine

6bacon strips,diced
-
6boneless pork chops,sliced into strips

1 pkg(10 ounces) fresh spinach,torn

2garlic cloves,minced
-
2 tspseasoned pepper
-
1 tspdried oregano
-
1 tspsea salt
-
1/2 tspitalian seasoning
-
1 pkg(8 ounces) cream cheese,softened

1 cshredded sharp cheddar cheese
-
1/2 cshredded swiss cheese
-
3/4 cshredded white cheddar cheese
-
4 Tbspgrated parmesan cheese
How To Make au gratin pork casserole

1Preheat oven to 350 degrees F.

2Heat margarine in a large skillet over medium heat.Add diced carrots and onion,saute for 5 minutes or until golden.Place them on a large plate.

3In the same skillet,cook bacon over medium heat until crisp;remove to paper towels to drain.

4In a large saucepan,add bacon drippings,cook sliced pork until browned.Add spinach and garlic;cook and stir for 6 minutes.Drain thoroughly.

5Stir in seasoned pepper,oregano,sea salt,italian seasoning,cream cheese,sharp cheddar cheese and bacon.

6Place half of the carrot-onion mixture in a greased 1-qt.baking dish;top with pork mixture and remaining carrot-onion mixture(dish will be full).Sprinkle with cheeses.

7Bake,uncovered,for 25-30 minutes or until pork is tender and cheeses is melted.
