Zucchini Penne Bake

This recipes takes 2% Velvetta and low-fat parmesan well. I like to use these to try to cut back on the fat a little.

I also like to go a little heavy on the pizza sauce.

You can use 1 lb. ground sausage or 1 lb. ground turkey for this as well.

Ingredients

1 1/2 c
penne pasta, uncooked
1 lb
ground beef
4 small
zucchini, cubed
1
red pepper, chopped
1 can(s)
pizza sauce
1/2 lb
Velvetta, cubed
parmesan cheese

Step-By-Step

1While cooking pasta brown meat in lg. deep skillet on mid-heat heat. Drain and return to skillet.

2Stir in zucchini, peppers and sauce; cook 5 to 6 minutes or until veggies are tender, stirring occasionally. Remove from heat.

3Drain pasta. Add to meat mixture with Velvetta; stir until well blended. Spoon into 9x13 dish sprayed with nonstick. Sprinkle with parmesan. Bake 15 minutes.
