- 8 oz
- tomato sauce
- 1 pkg
- spaghetti sauce mix
- 2 c
- mozzarella cheese, shredded
- 1 c
- cottage cheese
- 1/2 c
- parmesan cheese, grated
- eggs, beaten
- 1/4 c
- parsley, chopped
- 1/2 tsp
- manicotti shells, cooked
1Blend tomato sauce, spaghetti sauce mix and 1 1/2 cup water.
2Simmer, uncovered for 10-12 minutes.
3Meanwhile, combine 1 cup mozzarella, cottage cheese and parmesan.
4Add eggs, parsley, salt and pepper; mix lightly.
5Stuff manicotti shells with cheese mixture, using about 1/4 cup for each.
6Pour 1/2 cup of sauce mixture in to 12 x 7 1/2 x 2-inch baking dish.
7Arrange manicotti in dish; pour remaining sauce atop.
8Sprinkle with remaining mozzarella.
9Bake uncovered at 350 until bubbly, 25-30 minutes.
