Ingredients For tagliolini al limone

  • 1 lb
    tagliolini pasta
  • 4 Tbsp
    butter
  • 16 lg
    basil leaves, julienned
  • 1/4 c
    + 4 tsp lemon juice
  • 2 c
    heavy cream
  • 1/2 c
    parmigiano-reggiano cheese, grated
  • pepper, to taste
  • GARNISH:
  • 6 - 8
    lemon wedges

How To Make tagliolini al limone

    Cook the pasta according to directions on package (al dente). Drain.

    Meanwhile, in medium sauce pan, melt butter over medium heat. Add basil & cook; stirring frequently, until aromatic, about 3 minutes. Stir in the lemon juice & continue to cook until the lemon juice is reduced by half. Reduce the heat to low & add the cream. Slowly cook the cream until it thickens to a sauce consistency, stirring occastionally, about 5 minutes. Remove from heat.

    Divide the paste between 6 - 8 serving bowls & ladle the sauce evenly over the servings. Divide the cheese between the portions, sprinkling it evenly over the sauce & top each serving with a few grinds of pepper. Serve each portion with a lemon wedge on the side.
