Penne with Spicy Tomato sauce

This is one of my meatless signature dishes.
The original recipe came from Canadian Living Cookbook but I tweaked it to my own liking.
It has become a favorite in our house and I always serve it at special occasions and I always get rave reviews.

pinch tips: How to Mince Garlic






3 Tbsp
olive oil
4 clove
garlic , minced
1/2 tsp
red pepper flakes
1 can(s)
28 oz plum tomatoes pureed
1 tsp
1/2 tsp
1/3 c
chopped fresh basil and cilantro
1 lb
pkg penne
1 Tbsp
brown sugar or to taste
1/2 c
freshly grated parmeasn cheese

Directions Step-By-Step

In a lge dutch oven saute garlic and add pepper flakes and cook till careful not to burn!!
Add pureed tomatoes, s/p and simmer till thickened.
Stir in half the basil and cilantro.
Meanwhile cook your penne. Drain well.
Pour sauce over noodles and top with remaining fresh basil and parmesan cheese. Serve with a crisp green salad. So delicious!!
