Pasta with Potatoes and Peas

This is a quick dinner for during the week. My sister, Kerri, gave me this recipe.

Ingredients

1 small
onion, chopped fine
2 clove
garlic, minced
3
potatoes, peeled and diced
1 pkg
frozen peas
2 can(s)
chicken broth
1 lb
curly elbow pasta or pasta of your choice
olive oil or cooking spray

Step-By-Step

1Saute chopped onion and minced garlic in a large skillet with olive oil or cooking spray.
2Add 3 potatoes, peeled and diced. Add package frozen peas.
3Add 2 cans of chicken broth and simmer until potatoes are cooked. Meanwhile, cook pasta according to package directions.
4Add coked pasta to saute pan with potatoes and peas. Toss and season with salt and pepper. Enjoy.
