Ingredients For nutty orzo & veggies

  • 1 bag
    mixed vegetables, frozen (i use california-style veggies - broccoli, cauliflower, carrots)
  • 1 bag
    orzo pasta, uncooked
  • 1 can
    garbanzos, canned, with juice, drained (chickpeas)
  • 1 can
    tomatoes, diced, with garlic & onions
  • 1 jar
    marinara sauce
  • 1 Tbsp
    thyme, dried
  • 1 c
    cashews, salted
  • mozzarella cheese, shredded

How To Make nutty orzo & veggies

  • 1
    In a large pasta pot, boil the frozen vegetables, orzo together according pasta directions, omiting any salt or oil. Drain & return mixture to hot pot.

    Stir in beans, tomatoes, marinara sauce & thyme. Bring to boiling; reduce heat. Cover & simmer for 5 minutes.

    Stir in cashews & cook another 2 minutes.
  • 4
    Sprinkle individual servings with mozzarella cheese.
