Ingredients For nutty orzo & veggies

1 bagmixed vegetables, frozen (i use california-style veggies - broccoli, cauliflower, carrots)

1 bagorzo pasta, uncooked

1 cangarbanzos, canned, with juice, drained (chickpeas)

1 cantomatoes, diced, with garlic & onions
-
1 jarmarinara sauce
-
1 Tbspthyme, dried
-
1 ccashews, salted
-
mozzarella cheese, shredded
How To Make nutty orzo & veggies

1In a large pasta pot, boil the frozen vegetables, orzo together according pasta directions, omiting any salt or oil. Drain & return mixture to hot pot.

2Stir in beans, tomatoes, marinara sauce & thyme. Bring to boiling; reduce heat. Cover & simmer for 5 minutes.

3Stir in cashews & cook another 2 minutes.

4Sprinkle individual servings with mozzarella cheese.
