My Favorite Macaroni and Cheese Recipe

I got this recipe out of a Betty Crocker cookbook many years ago. I no longer have the book. Whenever I wanted to make the dish again, I would call my daughter and ask her for the ingredients.

* I like the flavor of the tomato on top of the casserole.

Ingredients

1 c
elbow macaroni
1/4 c
chopped onion
1 Tbsp
margarine or butter
1 Tbsp
all-purpose flour
dash(es)
pepper
1 c
milk
1 1/2 c
shredded cheddar cheese
1
med. tomato (optional)

Directions Step-By-Step

Cook macaroni for 10 minutes. Drain well. In med. saucepan, cook onion in margarine or butter until tender, but not brown. Stir in flour and pepper.

Add milk all at once. Cook and stir until slightly thick and bubbly. Add cheese, stirring until melted. Stir in macaroni. Put in 1 qt. casserole. Bake in 350 degree oven for 25-30 min. If desired, arrange tomato slices atop macaroni for the last 5 minutes of baking. Let stand 10 min. before serving.
