Creamy Spinach Sausage Pasta

Jolayne Cooper

I was looking for something quick to make and that I could make ahead of time. I saw the picture and read the recipe and I was hooked. I got this recipe from a "Best of Taste of Home" cookbook. We all liked it and I had one guest ask for the recipe. Hope you enjoy!

3 c
uncooked rigatoni or large tube pasta
1 lb
bulk italian sausage
1 c
finely chopped onion
1 can(s)
(14 1/2 ounces) italian diced tomatoes, undrained
1 pkg
(10 ounces) frozen creamed spinach, thawed
8 oz
cream cheese, softened
2 c
(8 ounces) shredded part-skim mozzarella cheese, divided

1Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook sausage and onion over medium heat until sausage is no longer pink; drain. Stir in the tomatoes, spinach, cream cheese and 1 cup mozzarella cheese. Transfer to a greased 11 x 7 inch baking dish.
2Cover and bake at 350 degrees F for 35 minutes. Uncover; sprinkle with remaining cheese. Bake 10 minutes longer or until cheese is melted.
3NOTE: For time-saving convenience, you can assemble it the night before, then bake it the next day.
