Delicious as is...sometimes I add veggies to this casserole as well. Chicken is a great addition instead of ham. A tasty comfort meal.

Ingredients

2 1/2 c
uncooked pasta - your choice - i use penne or rigatoni
1/2 c
minced onion
1 Tbsp
garlic paste
3 Tbsp
each - butter & flour
2 1/2 c
milk
1/2 c
heavy cream
1/2 tsp
dry mustard
pinch
nutmeg
3 - 4
grinds, fresh black pepper
1 1/2 c
fresh shredded, swiss cheese
1 c
fresh shredded, colby cheese
2 c
cooked, cubed ham
1/2 c
italian bread crumbs
1/2 stick
butter, melted
1/2 c
shredded parmesan cheese

Step-By-Step

1Cook your pasta and drain. Just al dente. Set aside.
2Preheat oven yo 375 degree F. Grease a medium casserole dish. Set aside.

In a large saucepan, over medium heat - melt butter. Add onion and garlic and cook a few minutes or until onion is tender, stirring often.

Stir in the flour and continue stirring for a couple minutes.
3Whisk in the milk and cream. Bring to a boil and cook until thickened, stirring continuously. Stir in mustard, nutmeg and pepper.

Stir in the Swiss and Colby cheeses. Once melted stir in the ham and pasta.
4Spread mixture into prepared dish.
5In a small bowl. combine the crumbs, butter and Parmesan cheese. Sprinkle evenly over the top of casserole and bake for 20 minutes or until bubbly and golden on top.
6Salt and pepper to taste as serving.
