Broccoli, Roma Tomato & Angel Hair Pasta

I cook up a lot of pasta at a time and freeze it in serving sizes - usually about 2 cups per baggie. This makes it easy to prep a sauce or veggies to saute with it.

Ingredients

2 c
cooked pasta (i like angel hair)
1 c
raw broccoli, chopped
1/2 c
roma tomato, chopped
1 Tbsp
extra virgin olive oil
1 tsp
crushed red pepper
1 clove
garlic
1 pinch
oregano (to taste)
1 pinch
salt

Step-By-Step

1Cook pasta - generally best texture is to cook 12 minutes after boil.
2In a fry pan saute garlic and broccoli in olive oil until broccoli is tender crisp.
3Add tomatoes to the fry pan. Sweat tomatoes until they are soft but not mushy.
4Add salt, oregano and red pepper. Mix.
5Add drained pasta to fry pan and toss with vegetables.
6Serve with grated cheese.
