Perfect for these hot summer nights! Goes together quickly and not too heavy! Serving it tonight along side some grilled BBQ pork chops.

Notes from the Test Kitchen:
Fresh and satisfying, creamy and crunchy! We love the bacon flavor (of course) and are thinking about adding grilled chicken the next time we make it! Yum.


1 box
rotini pasta
green onions, chopped
1 pt
cherry tomatoes, halved
1 1/4 c
celery, diced
1 1/4 c
5 tsp
white vinegar
1 Tbsp
1 lb
cooked bacon, crumbled
salt & pepper to taste

Directions Step-By-Step

Cook pasta according to package directions. Drain and rinse in cold water.

In large bowl, combine pasta, green onions, tomatoes and celery. (I didn't have celery today, so I used celery seed instead)

In a small bowl, combine mayonnaise, vinegar, sugar, salt & pepper, then pour over pasta mixture. Cover and chill.

Just before serving, add bacon.

I rarely make pasta salad because I feel that it usually doesn't taste like anything. This one is fantastic! As mentioned in the recipe, I didnt have any celery so I added a bit of celery seed to the dressing. I also added about 1/2C finely diced sweet onion to make up for the missing crunch from the celery. I made another 1/2 batch of dressing to add the second day because the pasta had soaked it all up. Seriously, the best pasta salad ever!
