Zucchini Mushroom Fritata

This dish was a big hit for the vegetarians on the ship I worked on. They loved it because it was filling.

Ingredients

6 c
zucchini, diced
2 c
mushrooms, sliced
2 small
onions, minced
2
cloves garlic, minced
8
egg
2 c
bisquick
1/2 tsp
each salt and pepper
1 c
oil
2 c
jack or romano cheese ( i use pepper jack)

Step-By-Step

1Saute zucchini,onions and garlic until half cooked. Place in mixing bowl.
2Beat eggs and add salt and pepper and add to zucchini mixture alternately with Bisquick.
3Add oil and cheese and mix well
4Pour into greased 9x13 pan and bake 30 to 40 minutes at 350* or until done.
