These are really good. The sauce is rich and flavorful. You can make the white bean "meat"balls ahead of time and just throw everything together when it's time to cook dinner.

Ingredients For white bean "meat"balls with onion-wine sauce

  • WHITE BEAN "MEAT"BALLS
  • 2 can
    white beans, rinsed and drained
  • 2/3 c
    plain breadcrumbs
  • 2 lg
    eggs
  • 1 sm
    onion, minced
  • 1 clove
    garlic, minced
  • 2 Tbsp
    fresh chopped parsley
  • 1 tsp
    ground cumin
  • 3/4 tsp
    salt
  • ground black pepper, to taste
  • 1/4 c
    extra virgin olive oil
  • ONION-WINE SAUCE
  • 1 sm
    onion, finely chopped
  • 4 clove
    garlic, minced
  • 2 Tbsp
    all purpose flour
  • 1 tsp
    dried thyme
  • 3/4 c
    dry white wine
  • 1 1/2 c
    vegetable broth
  • fresh chopped parsley, to garnish

How To Make white bean "meat"balls with onion-wine sauce

    Add the white beans into a food processor. Blitz until well mashed then pour into a mixing bowl.

    Add in breadcrumbs, eggs, onion, garlic, parsley, cumin, salt, and pepper. Combine with hands or wooden spoon until well mixed together into a paste like texture.

    Shape into tightly packed balls.

    Heat olive oil in a nonstick pan and brown meatballs evenly on all sides. Remove to a plate; keep warm.

    To make the sauce, add the onions to pan drippings over medium heat and start to cook. When onions are translucent and starting to brown, add in garlic.

    When the onions are starting to brown, add flour and cook about 2 minutes.

    Add in white wine, thyme, and salt and pepper to taste. Stir around to mix. Reduce heat to simmer and reduce about 6 minutes. Add vegetable broth. Cook 6 minutes more or until you end up with a slightly creamy sauce.

    Add meatballs back into pan in a single layer. Cook 2-3 minutes longer, or until the meatballs are incorporated and heated through.

    Remove from heat. To plate: transfer some of the meatballs onto a plate and ladle some sauce over the top. Garnish with fresh parsley.

    Serve with rice, roasted potatoes or just some crusty bread and a fresh green vegetable!
