Preheat the oven to 350 degrees. Heat oil in a large nonstick skillet over medium high heat. Lightly beat eggs in a medium bown. Stir in cheeses, garlic and seasonings, withe salt and pepper. When the oil is shimmering pour egg mixture into pan and cook until eggs begin to turn golden brown around the edges. Add all vegetables except the tomatoes. After adding all vegetables add tomatoes and arrange sliced on top. Some may sink. Transfer skillet to oven and bake until eggs are just set in the center 8-10 minutes.
