Ingredients

1/2 cup
bulk sausage
1/2 cup
diced celery
1/2 cup
chopped tart apples
1/4 tsp
salt
1/8 tsp
pepper
1/2 tsp
sage
3/4 cup
hot water

1 tbsp
melted butter

Directions Step-By-Step

cook sausage and celery in a skillet until brown,stirring frequently.add remaining ingredients except quail and butter and mix well. stuff the quail with sausage mixture and truss. rub with butter and place in roaster.cover bake at 325 degrees for 1 hour and 40 minutes.remove cover and bake for 20 minutes longer.
