Quinoa with Dried Cherries & Pine Nuts

1 c
cooked quinoa (following package directions)
1/4 c
dried sweet cherries (sliced in half) - can use dried cranberries
1/4 c
pine nuts (pan toasted)
1 - 2
scallions (finely chopped)
1/2 c
baby spinach (finely chopped)
1/2 c
arugula (finely chopped)
1/4 c
fresh mint (finely chopped)
1/4 c
fresh flat leaf parsley (finely chopped)


2 Tbsp
meyer lemon olive oil blend (or extra-virgin olive oil)
1/2 tsp
dijon mustard
2 Tbsp
fresh lemon juice
1 tsp
lemon zest
kosher salt to taste
freshly ground pepper to taste


1Cook quinoa according to package directions.
2Make Dressing: Combine dressing ingredients in a large bowl. Stir with a whisk until incorporated.
3Add cherries, pine nuts, scallion, spinach, arugula, mint, parsley and dressing to quinoa. Toss to gently combine.
4Serve chilled or at room temperature.
