If your going to make a roast in the oven. Take the meat out of the wrapper and wash it off in cold water, put the meat in a cassarole dish salt and pepper and put the lid on. Don't put any water in it. Can can save the drips off the roast to either make gravy or you can put the drips in a freezer bag when they are cooled and put in the freezer to add to soup or use in a recipe that calls for beef stock.
