Quick Jambalaya

I used to work in a concession area of a bingo hall in North Mississippi years ago. On Sundays I would make something homemade. I found this in one of my Southern Living Annual recipe books. I could never make enough or make it often enough. The folks there went crazy over it.

Ingredients

2 1/4 c
water
1 1/2 c
uncooked long-grain rice
1 can(s)
cream of celery soup
1 can(s)
cream of onion soup
1 can(s)
can of rotel
1 lb
beef or pork link sausage, sliced in 1/4 in. slices

Step-By-Step

1Put first 5 ingredients in 2qt greased baking dish. Stir to combine. Cover and bake at 350 for 40 min.
2Take out of oven and stir in sausage. Cover and bake approximately 20 more minutes or until rice is done.
3Enjoy!
