An awesome meal I threw together with what I had on hand, and has already been requested again. The saltiness of the sausage and the natural sweetness of the squash, onion and garlic went so well together. Easy, just some choppingof veggies and meat.

Ingredients

1 3/4 lb
smoked sausage or kielbasa sliced into 1 inch chunks

med russet potatoes, peeled and cubed about 3/4 inch
1 small
butternut squash, peeled and cubed 3/4 inch size
1 large
sweet onion, cut in half and cut into several 1/2 inch wedges
8 clove
garlic, smashed
Olive
oil for tossing with veggies
1 1/2 Tbsp
paprika or more to taste
Kosher
salt to taste - i sprinkled evenly
Garlic
powder to taste - i used about 1 1/2 tbsp
1 1/2 tsp
each - dried rosemary & dried thyme
Black
pepper to taste
Extra
olive oil for drizzling

Directions Step-By-Step

Preheat oven to 400 degree F.

In a large bowl, toss the veggies, meat, onion and garlic together. Sprinkle with seasonings and toss with 3 - 4 tablespoons olive oil until all is coated.

On the largest sheet pan you have with sides, cover with foil. Spray with nonstick cooking spray.

Spread the mixture evenly out onto pan in single layer if possible. Drizzle lightly with additional oil.

I baked mine in my convection oven and was done in 1 hour 15 minutes. I'm guessing it would be 1 hour and 30 - 45 minutes regular oven, turning once or twice between baking.

Taste and adjust seasoning if needed. Plate and enjoy!
