Ingredients

4 lb
oxtails cut up or pre -packaged (2 pks store bought)
2
celery ribs chopped
1 large
green bell pepper diced
1 small
white onion ( diced)
2 Tbsp
garlic powder
1/4 tsp
salt
1/4 tsp
black pepper
1/4 tsp
red pepper flakes or crushed red pepper
2 Tbsp
complete seasonings ( can be bought at fiesta food mart , food town or online)
16 oz
coke (not diet)
5 OR 6
russet potatoes peeled and cut into bite sized pieces
3 can(s)
cambell's golden mushroom soup
cooked cornbread ( i use jiffy or homemade

Step-By-Step

1WASH OXTAILS AND PUT IN A ROASTING PAN ADD CELERY, BELL PEPPER ,ONION, RED PEPPER FLAKES, SALT & BLACK PEPPER, GARLIC POWDER AND COMPLETE SEASONING
2COVER WITH ONE 16OZ ROOM TEMPERTURE COKE AND ENOUGH WATER TO COVER .
3PLACE OXTAILS IN A 350*OVEN FOR 2HOURS OR UNTIL TENDER ADD POTATOES AND CONTINUE COOKING UNTIL ALMOST DONE : ADD MUSHROOM SOUP AND COOK UNTIL HEATED THROUGH AND POTATOES ARE FULLY COOKED BUT NOT MUSHY.
4LET SET FOR 30 MIN. SERVE OVER HOT CORNBREAD.
5MUSHROOM GRAVY SHOULD BE THICK WHEN DONE IF NOT JUST BROWN A LITTLE FLOUR ABOUT 2 TABLESPOONS IN SOME VEGETABLE OIL AND ADD TO OXTAILS.
6SERVE WITH FRESH GREEN BEANS, CORN BREAD AND PEACH COBBLER
