Ingredients

1 pkg
rice-a-roni spanish rice
1 bag(s)
(small) corn chips, divided
1 pkg
tamaes, (any kind, canned or frozen)
1 can(s)
chili (with or without beans)
1 pkg
shredded sharp cheddar cheese
black olives, optional
you can add refried beans, jalapeno peppers, and hot sauce.

Step-By-Step

1Cook rice according to package directions: set aside. Coat a 9x11 inch casserole dish with cooking spray. Layer corn chips on the bottom of the dish. Then pour rice over the chips.
2Add a layer of tamales over the rice. Pour the chili over the tamales. Add another layer of corn chips.
3Bake casserole for 20 minutes at 400 degrees. Take casserole out of the oven and sprinkle cheese on tip; the cook for another 5 minutes
