I found this recipe on a container of hummus I purchased recently and increased the ingredients to be able to make it a lunch for 2.

Ingredients

1
boneless skinless chicken breast
1 c
italian dressing
6 Tbsp
hummus
4
romaine lettuce leaves
2 slice
sliced red onion
4 large
slices tomato
4 Tbsp
mild salsa

Step-By-Step

1Marinate chicken in Italian dressing.

Grill so chicken is cooked thoroughly.

Cut into thin slices and set aside.
2On a large wrap or just flour tortilla spread 3 Tbsp hummus, 2 lettuce leaves, 2 slices of tomato, 1 slice separated red onion and 1/2 the prepared chicken.

Top with 2 Tbsp of mild salsa and roll into wraps.
3For those who don't eat a lot of meat, just replace the chicken with extra firm tofu. I like it better than with chicken!
