Ingredients

4 / 5 lb
lamb shoulder roast
3 Tbsp
all purpose flour
1 Tbsp
dry mustard
1/2 tsp
salt
1 c
currant jelly
1/4 tsp
pepper
1/2 c
cold water

Step-By-Step

1have roast boned and rolled.
Place on rack in open roasting pan.
2Mix flour, mustard, salt, and pepper; blend in cold water.
Spread over meat.
Insert meat thermometer
Roast in 325 F oven for 3 1/2 to 4 hours or until internal temp of 170 F.
3Spread with jelly the last hour, baste every 15 minutes.

Sprinkle with parsley if desired
