Kielbasa & Potato Oven Bake

The men on my husband's side of the family decided to start a holiday tradition of making sausage. When he came home w/ 5 lbs. of kielbasa, I wasn't sure what to do with it. I came up with this very simple, very delicious recipe. Enjoy!

Ingredients

1 lb
small potaotes (i use waxy ones like red or yukon gold)
1
large onion, chopped
1 lb
kielbasa
olive oil
sea salt

Directions Step-By-Step

Preheat oven to 350 & spray a roasting pan well with cooking spray.

Quarter the potatoes, combine with the onion, & toss with a little olive oil. Pour into the pan & sprinkle w/ sea salt to taste.

Slice the kielbasa & add to the pan.

Cover with foil & back for 30 min. Uncover, stir, & bake another 30 min. uncovered.
