I had seen this on a restaurant's menu, and I put it in my "arsenal" for the right time. I was able to purchase 10 lbs green tomatoes this summer, so I knew fried green tomatoes were in our future! The roasted red pepper mayo makes it. I can still taste how good they turned out!

Fried green tomatoes are one of my all-time favorite summertime indulgences! This sandwich really shows off the tomatoes' flavor by using light panko breadcrumbs as coating. The roasted red pepper mayo is the perfect finishing touch.

Ingredients

small green tomatoes
1 c
buttermilk
1/2 c
panko bread crumbs
1/2 c
self rising flour
vegetable oil for frying
salt, red pepper
4 slice
bacon (turkey bacon can be used)
1 c
lettuce leaves (iceberg or green leaf)
2 Tbsp
mayonnaise
2 Tbsp
roasted red pepper vinaigrette
4 slice
bread (any type)

I have a long growing season where I live here in CA and a good deal of my tomatoes never get a chance to turn red. Fried green tomatoes are just so darned good. On occasion we'll have just fried green tomatoes or fried green tomatoes and fried okra for dinner, nothing else. I can eat a BLT anytime and even though green tomatoes taste so different from red tomatoes either one makes a delicious sandwich When I make this sandwich I always use 4 slices of thick sliced bacon per sandwich and quite often add half of a sliced Hass avocado. The tartness of the green tomato goes so well with the avocado. I always fry my tomatoes in bacon fat, healthy or not the comfort and taste factors override that one.

Just a reminder - you CAN freeze green tomatoes. I buy them (or grow them) every spring/summer so we can fry up some anytime we want. This recipe sounds wonderful, so will also have to try this soon. My freezer is getting full.

Oh, I love, Love, LOVE fried green tomatoes! Until I saw the movie, I had never had any. They looked so good, my mouth started watering. I bought some at a local grocery that catered to their customers. They were such nice people. I'm not sure if they're in business anymore. It would be interesting to find out. I bought the book, and several recipes were published that were shown in the movie. My mouth is watering right now!
