Fried Green Tomato BLT Sandwich

I had seen this on a restaurant's menu, and I put it in my "arsenal" for the right time. I was able to purchase 10 lbs green tomatoes this summer, so I knew fried green tomatoes were in our future! The roasted red pepper mayo makes it. I can still taste how good they turned out!

Fried green tomatoes are one of my all-time favorite summertime indulgences! This sandwich really shows off the tomatoes' flavor by using light panko breadcrumbs as coating. The roasted red pepper mayo is the perfect finishing touch.


small green tomatoes
1 c
1/2 c
panko bread crumbs
1/2 c
self rising flour
vegetable oil for frying
salt, red pepper
4 slice
bacon (turkey bacon can be used)
1 c
lettuce leaves (iceberg or green leaf)
2 Tbsp
2 Tbsp
roasted red pepper vinaigrette
4 slice
bread (any type)

Directions Step-By-Step

Slice green tomatoes. Put in a colander and set in the sink. Sprinkle salt over them and let the excess liquid be drawn out. This should take about 30 minutes. Pour the buttermilk in one bowl. In another bowl, mix together the panko bread crumbs, flour, salt to taste, and red pepper. Heat approximately 1/2 cup vegetable oil in a skillet. Place the tomatoes in the buttermilk, then dredge through the panko mixture. Pan-fry until crispy. Drain on a cooling rack (so they won't get soggy).
Meanwhile, mix together roasted red pepper vinaigrette and mayo. Toast bread slices. Assemble sandwich with red pepper mayo, lettuce, bacon (2 slices per sandwich) and tomatoes.

Thanks Blondie, I agree with you! I NEVER open anything that looks "fishy." It's just irritating that they don't have anything better to do. This is my last comment on this subject. Back to Fried Green tomatoes. My eye doctor asked me about fried green tomatoes and he said he had never eaten any. So, I made a copy of my recipe and took it to his office. The girls who work there passed it around the whole office. Anxiously awaiting my next appointment to find out how they liked it. - RT

Fried green tomatoes are a favorite of mine too. However mine are fixed just a little differently. They are sliced and salted and set to drain like these but I fry the bacon and then flour the tomatoes and fry in the bacon drippings. I know that's probably not healthy but the bacon drippings give them a great flavor. I may try the panko this summer tho. That sounds good.

Why would anyone think that anyone looking for FRIED GREEN TOMATO RECIPES is interested in reading that someone is making a lot of money on her computer???? Sounds "fishy" to me.
