I married a Ukrainian and he loves kielbasa and kraut , so about 30 years ago I wanted to make something for him but wouldn't take to long and came up with this recipe, Its so delicious! I use the fatback but you can dice up 2 strips of bacon an cook to get the same affect. Its a definite favorite, I make it with an without the vodka!
In a large frying pan, on med hi heat add your fatback, then add sauerkraut, shredded carrot and sm onion…cook till translucent and soft. Add your Kielbasa and stir till cooked, add the large onion and the vodka and cook till onions are translucent. Once all incorporated and cooked lower the gas to med/low and add the sour cream...cook till cream is nice an soft and creamy throughout the pan. Mix well and lower to simmer to get the favors all combined..Serve! ENJOY!
