Ingredients For creamy cashew curry

  • 1/2 Tbsp
    (8 ml) olive oil
  • 1/4 c
    (65 ml) chopped onion
  • 1 sm
    clove garlic, minced
  • 1/2 tsp
    (2.5 ml) freshly grated ginger
  • 1/2 Tbsp
    (8 ml) curry powder, or to taste
  • 1 1/4 c
    (600 ml) silk creamy cashew
  • 1/4 c
    (65 ml) roasted, salted cashews, plus additional for garnish
  • 2 c
    (500 ml) chopped veggies (cauliflower, green beans, broccoli, etc.)
  • salt, to taste
  • 2 c
    (500 ml) cooked rice

How To Make creamy cashew curry

  • 1
    Sauté onion, garlic & ginger in olive oil for 5 minutes.
  • 2
    Add curry powder and Silk, mixing well. Simmer for 5 minutes.

    Finely grind cashews in blender or food processor. Add to Silk mixture along with veggies.
  • 4
    Cover & simmer until veggies are tender, about 7-10 minutes.

    Salt to taste. Serve over rice with additional cashews.
