Ingredients For creamy cashew curry

1/2 Tbsp(8 ml) olive oil

1/4 c(65 ml) chopped onion

1 smclove garlic, minced
-
1/2 tsp(2.5 ml) freshly grated ginger
-
1/2 Tbsp(8 ml) curry powder, or to taste
-
1 1/4 c(600 ml) silk creamy cashew
-
1/4 c(65 ml) roasted, salted cashews, plus additional for garnish
-
2 c(500 ml) chopped veggies (cauliflower, green beans, broccoli, etc.)

salt, to taste

2 c(500 ml) cooked rice
How To Make creamy cashew curry

1Sauté onion, garlic & ginger in olive oil for 5 minutes.

2Add curry powder and Silk, mixing well. Simmer for 5 minutes.

3Finely grind cashews in blender or food processor. Add to Silk mixture along with veggies.

4Cover & simmer until veggies are tender, about 7-10 minutes.

5Salt to taste. Serve over rice with additional cashews.
