Ingredients

1 medium zucchini (seeds removed)
1 medium onion
2 small green or red pepper
3 medium potatoes
2 medium 2 medium tomatoes
1 lb ground beef or poek
1/4 c oil
2 tsp sugar
16 oz tomato sauce divided
1/2 tsp oregano, dried
2 tsp ramano cheese
8 oz mozzarella cheese
s&p
2 Tbsp italian parsley

Linda's Notes:

This was my mother-in-laws recipe and we all loved the way she used the zucchini from the garden.

 

Directions

1
chop veggies and saute in oil, add sugar, 8 oz tomato sauce, S&P and simmer for 10 minutes, add chopped parsley

brown meat in another pan

in casserole dish, layer 1/2 c. tomato sauce, 1/2 veggies, 1/2 meat, 1/2 mozzarella. Repeat

Bake @ 375* for 45 minutes or till bubbly

Hi Linda,
I made your Casserole Waltz tonight for dinner and it was absolutely scrumptious. My husband LOVED it. The only thing I added different was about 2 heaping teaspoons of garlic and I didn't measure the romano cheese, I just sprinkled it. Our house smelled wonderful while I was sauteing and also while it was baking. Thank you so much for sharing this GREAT recipe.

I took a picture of it when it came out of the oven but I'm not good at all being able to post pictures. If I have any luck, I'll post it to your recipe for you but if you don't see it, you'll know I couldn't get it to work. I've been trying for 2 nights to post pictures to 2 of my recipes and they're not on there yet. Seems to not work for me. Don't know what I'm doing wrong.

Thanks Ann for the encouragement. I actually don't follow the recipe to the T but out of respect for my mother in law I posted it as she gave it to us. I pretty much saute/simmer all together and don't bother the layers as I put it in the casserole dish. It seems to look different every time but always tastes good. Have a good day, linda

The layers didn't Work for me either and I just kinda mixed them together too. But I just gotta say that this was a fantastic casserole and I WILL be making it again and again. It is very tasty and we finished the left overs for dinner tonight. There isn't a morsel left in the dish.

I can't recommend this dish any higher. If I could I'd give it 25 stars.

Thanks again for sharing this Great recipe. I think it deserves a BLUE RIBBON. It's DELICIOUS!!!

I really don't know why the name. That is what my mother in law called it and she is no longer living to tell us.

My hubby recently got a doe and we have a nice stock of venison in our freezer. It makes a great Casserole Waltz too.
