Asparagus-Ham Custard

I love asparagus, and this is one great way to use it. It combined with the ham, and the accent of the mustard in the recipe made it a hit with my family.

Ingredients

1 lb
asparagus, cut in one inch pieces
6 large
eggs
3/4 c
milk
2 Tbsp
prepared mustard
1 tsp
dry mustard
1/4 c
chopped onion
2 c
diced cooked ham
2 c
grated swiss cheese

Directions Step-By-Step

Preheat oven to 400 degrees

Steam asparagus pieces until just tender crisp. Drain and set aside. (Drained canned asparagus can be substituted for fresh)

Beat eggs until light in color. Add milk. Blend in mustards, mixing well

Stir in onion, ham and cheese until well combined. Gently fold in asparagus

Pour mixture into a greased 8 inch square baking dish. Garnish with 5 asparagus tips and sprinkling of ham in the center

Bake for 30-35 mins or until knife inserted in center comes clean
