My take on stuffed peppers with a flavorful tamale filling, salsa and cheese.

Ingredients

4
bell peppers
1 pkg
xlnt tamales (6 pack in a bag)
1 jar(s)
salsa or picante sauce
8 oz
cheddar cheese, shredded

Step-By-Step

1Line 9x13 pan with foil or spray with nonstick spray.
2Wash peppers. Slice in half and take out core with seeds.
3Parboil in boiling water for 5 minutes. Remove with tongs and drain til cool enough to handle.
4Unwrap each tamale and break into large chunks into bowl.
5Place peppers halves in pan, cut side up, and stuff lightly with broken up tamales, using spoon to push into nooks and crannies.
6Using large serving spoon, scoop heaping spoonful of salsa on top of tamale-stuffed pepper halves.
7Grab a handful of shredded cheese and place on top.
8Bake at 350 for 25-30 minutes. Let cool for a few minutes.
9Serves 4 to 8 people, depending on whether someone wants 1 or 2 halves.
Note - I used only 3 peppers because one had gone bad, but there is enough tamale filling for 4 (8 halves)
