Ingredients

1 lb ground turkey or beef
1 pkg taco seasoning mix
1 can(s) kidney beans, canned and rinsed
1 can(s) whole kernal corn, undrained
1 jar(s) small, medium salsa
1/4 c queso, medium
1 lg pkg of small soft tortillas
4 c mexican blend shredded cheese

I created this last night and it was praised by my husband and I really liked it too. Just love when we create and it turns out good. Hope you will give it a try.

 

Directions

In a skillet, brown turkey. In a large glass bowl add the next 5 ingredients listed. Mix well in bowl adding 3 cups of cheese. It will be a bit soupy, but that is ok. In a 9x13 baking dish spray with cooking spray.

Place tortillas to cover the bottom, tearing them to fit. Pour 1/2 the mixture on top. Repeat and end up with tortillas on top. Add the rest of the cheese on top. Bake at 350F for 45 minutes covered with foil. When done, let set for 15 minutes.

So this was good but for my family we like more spice. I think instead of salsa next time I'll try enchilada sauce. It was good though and simple to make. Thanks for sharing!

Anaelisa...so glad you tried it. Every ones tastes are different. I did use medium salsa & medium queso. That's about as much spice as we can take. thanks for trying it out!!
