Mexican Inspired Stuffed Poblano

cilantro, fresh, chopped
Cut a V shape into pepper and remove seeds.
Dice tomato, onion, cilantro and jalapeno. Remove corn from cob if using fresh.
Chop hot links into small pcs.
In a large bowl mix together all ingredients using only 1/2 c of cheese, save remaining cheese for topping.
Place meat into pepper and gently but firmly press down into sides. Bake at 350° for about 30 min. Remove and place remaining cheese on top, bake another 20-30 min.
