Ingredients

poblano's
1/2 lb
ground beef
2
hot links
1/2 c
instant brown rice
1 c
fresh or frozen corn
1 large
tomato
1 small
jalapeno
1/2 c
onion
1 tsp
cumin
1 tsp
ancho chili powder
1 tsp
granulated garlic
1- 1/2 c
cheese
2 Tbsp
cilantro, fresh, chopped

Step-By-Step

1Cut a V shape into pepper and remove seeds.
2Dice tomato, onion, cilantro and jalapeno. Remove corn from cob if using fresh.
3Chop hot links into small pcs.
4In a large bowl mix together all ingredients using only 1/2 c of cheese, save remaining cheese for topping.
5Place meat into pepper and gently but firmly press down into sides. Bake at 350° for about 30 min. Remove and place remaining cheese on top, bake another 20-30 min.
