Frito Enchilada Pie

This is one of those EASY, quick meals that will make your family smile. I always have lunchbox size bags of Fritos left, always!! I decided I didn't want to do the typical Frito chili pie, so I did a Enchilada version.

Ingredients

4 c
small fritos
3 c
cooked ground beef, taco seasoned
3 c
grated cheese
10 oz
can of enchilada sauce

Directions Step-By-Step

I poured the Fritos into a large bowl, added the cooked ground beef and 2 c of cheese and tossed it to mix.

I emptied it into my elec skillet, but you can certainly use a casserole dish and heat it in the oven.

I sprinkled on the rest of the cheese and poured the enchilada sauce on top. I set my skillet to the "warm" setting, placed the lid on, and in about 15 min it was bubbly hot and the cheese was melted.

Garnish with sour cream, pico de gallo, salsa, salad, whatever your heart desires.

wow that sounds really good Kelly. And since I posted that I make my own enchilada sauce most of the time and have some leftover in the freezer now, and they have left about 6 bags of chili flavored fritos again in the box, so think it's about time to make it again. Your version sounds really good and like Frito taco bowl or something, lol you should post that recipe!

Made this tonight, it was awesome. The whole family liked it. I didnt use the whole can of Enchilada sauce, as my oldest son doesnt care for it. We topped it with lettuce, tomatoes, chopped onion, sour cream and salsa. Quick and simple dinner!

In fact I have taco meat in the freezer. I think I will make a "Me" size serving of this over the weekend.
