Ingredients For fried chile cheese

1 - 12 ozqueso fresco cheese

1 mdjalapeno pepper, rinsed

2 Tbspall purpose flour
-
1 tspadobo seasoning

1/4 colive oil, light + more for dipping
How To Make fried chile cheese

1Cut cheese round into 8 equal wedges; then cut each wedge lengthwise to, but not through, outer edge.

2Cut jalapeno in 1/2 & remove seeds; finely chop.

3Stuff each cheese wedge with 1/2 tsp jalapeno; then press wedge halves together to close.

4Preheat large saute pan on medium high heat. In a small bowl, combine flour & adobo; mix well. Coat cheese wedges with flour mixture; shaking off excess.

5Add oil to pan. Add wedges; cook 15 - 30 seconds each side or until rich golden brown. Drain on paper towels. Serve with additional oil for dipping.
