Ingredients
| 2 slice | bacon or 1/2 cup of ham ( chopped) |
| 1/2 c | onion, chopped |
| 1/2 c | green pepper, chopped |
| 2 clove | garlic, minced |
| 1 (15oz) can(s) | goya green pigeon peas (undrained) |
| 1 pkg | sazon goya con cilantro y achiote (found in the spanish section.) |
| 1/2 c | tomato sauce |
| 3 c | water |
| 2 c | rice |

Directions
Heat large skillet over medium heat. Add bacon, onions, and peppers.Cook for 3 minutes.( I also a pimentos/olives for flavor.)Stirin garlic and cook another 2 minutes longer. Add remaining ingredients except rice. Bring to a boil.Stir in rice, cover. REduce heat and simmer for 20 minutes or until rice is tender. Serves 8.
