Arroz Con Gandules
|2 slice||bacon or 1/2 cup of ham ( chopped)|
|1/2 c||onion, chopped|
|1/2 c||green pepper, chopped|
|2 clove||garlic, minced|
|1 (15oz) can(s)||goya green pigeon peas (undrained)|
|1 pkg||sazon goya con cilantro y achiote (found in the spanish section.)|
|1/2 c||tomato sauce|

DirectionsHeat large skillet over medium heat. Add bacon, onions, and peppers.Cook for 3 minutes.( I also a pimentos/olives for flavor.)Stirin garlic and cook another 2 minutes longer. Add remaining ingredients except rice. Bring to a boil.Stir in rice, cover. REduce heat and simmer for 20 minutes or until rice is tender. Serves 8.
