An easy recipe for an Italian flavored American rabbit.

Ingredients

  • 2 - rabbits,cut up
  • 15 ounces sliced mushrooms
  • 1 medium onion, sliced
  • 15 ounces tomato sauce
  • 1/4 cup flour
  • - garlic salt, to taste
  • - black pepper
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon oregano, dried
  • 1/4 teaspoon ground garlic
  • 1 medium green pepper, sliced into strips
  • 1 - rib of celery, chopped
  • 1 1/2 ounces ripe, sliced black olives

How To Make rabbit cacciatore

  • Step 1
    Shake the rabbit pieces in a bag with flour, salt and pepper. In a large skillet saute the pieces in oil until golden brown.
  • Step 2
    Add the remaining ingredients, except for the olives. Cover and simmer over low heat about 1 hr., or until the rabbit is tender.
  • Step 3
    Stir in black olives simmer 10 mins. more. Serve with rice or noodles if desired.
