As oven temps vary, remember to cook your rabbit to at least 165 degrees F, which kills any bacteria still in the meat. Use a meat thermometer to ensure the inside of the meat reaches that temperature.

Ingredients

  • 4 to 5 pounds rabbit
  • 28 ounces mushrooms
  • 28 ounces pork
  • 4 large carrots
  • 4 large onions
  • 1/3 cup raisins
  • 1/3 cup nuts ( your choice)
  • 1 - head garlic
  • 6 or 7 - black olives
  • 1 cup white wine
  • - cooking oil
  • - salt and pepper, to taste
  • 2 - bay leaves
  • - pimento - to taste

How To Make baked stuffed rabbit

  • Step 1
    Soak the cleaned rabbits in equal parts water and vinegar for 1 night. The next day, drain well and dry. Salt it inside and outside and grease with oil. Chop the mushrooms, carrots and onions. Chop the pork into pieces, as if for skewers.
  • Step 2
    Combine all ingredients together with nuts, olives, raisins and cloves of cleaned garlic. Add some more oil and mix the stuffing with spices. Put the rabbits in a greased baking dish and fill well with the stuffing.
  • Step 3
    Distribute the remaining stuffing around the rabbits and pour in the wine. Cover the pan with foil and put it in to bake for about 1 1/2 hours at a high temperature of 400 F.
  • Step 4
    Finally, bake it without foil an additional 10 minutes or until browned.
