Ingredients

bison ribeye steaks
2 Tbsp
ketchup
1 tsp
diced garlic
8 slice
smoked bacon, partially cooked
1 lb
potato croquettes
1/4 c
soy sauce
2 Tbsp
olive oil
2 tsp
snipped fresh thyme
1/4 tsp
dry mustard
4 tsp
steak spice rub
steak sauce

Directions Step-By-Step

Place meat in a resealable plastic bag set in a shallow dish.

For marinade: Combine soy sauce, olive oil, ketchup, snipped thyme, garlic and dry mustard in a bowl. Pour over meat; seal bag. Marinate in the refrigerator for 2 to 4 hours, turning bag occasionally.

Drain meat, discarding marinade. Sprinkle 4 teaspoons Spice rub over surface of meat and rub in with your fingers. Wrap the edge of each steak with 2 slices of partially cooked bacon, securing ends with wooden toothpicks.

Preheat grill. Reduce heat to medium. Place steaks on grill rack over heat and Cover.Allow to cook for 10 minutes, turning the steaks half way through.

If you like, garnish steaks with a thyme or oregano sprig.
Serve with fried croquettes and steak sauce.
