In a large stock pot, combine all ingredients and heat until boiling. Stir to make sure salt is dissolved. Remove from heat and let cool until room temperature.
Remove innards from turkey and rinse. Pat dry. Place turkey in brine, breast side down. Place in refrigerator at least overnight.
Remove turkey carefully. Drain excess brine and pat dry. Cook turkey as desired carefully watching thermometer as turkey will cook quicker.
