This is the ultimate bacon burger dish! Its a stuffed Bacon Brat Burger that has a Heirloom tomato bacon jam, with red pepper mayo, that sits on a Cronut! Every mans dream of a burger. It is paired with a applewood rubbed dusted fried pickle to boot!

Pan Fry

hickory smoked bacon, 1 pound for bacon jam, 1 pound for the weave
2 lb
italian sausage or brats,take the skins off the brats
applewood rub from grill mates, 1 jar
4 oz
cheddar cheese, shredded
1 large
yellow onion diced
3 oz
aged balsamic vinegar
3 oz
packed light brown sugar

heirloom tomato diced
2 clove
diced garlic

maple syrup

red bell pepper, diced fine

jar of sliced pickles, your favorite kind
bag of cornmeal, fine grind

large eggs for egg yolks, your using it for eggwash

Directions Step-By-Step

Step one bacon weave
easiest way is to look up a video on how to make a bacon weave, but basically if you know how to make lattice on a pie, you can do this. take one pound of bacon sliced, and lay into strips, 6 strips, now interlace 6 other strips of bacon also, its a hard thing to do, but that's why I suggest looking up on you tube or the ole google and watch a video on how to bacon weave. once you have your weave ready, you want to place it on a foil lined pan in the oven for 15 min at 375.once its three quarters done, pull it out and let cool
step 2 making the brat burger patty
take the brats and take the skin off the brats and put it in a bowl, just like hamburger meat, now take 2 pinches of a the applewood grillmates rub and add to the meat. Then take three slices of bacon and cut up fine, you want to add the diced bacon to the raw brat meat. Form a burger patty in your hand and put some of the cheddar in the middle of the patty, now form another patty and make it the size you prefer, theres enough meat. Add both patties together and you have a stuffed brat bacon burger patty, once your patties are made, store in fridge
Step 3 Heirloom tomato Bacon Jam
Her you want to take the rest of the bacon you have left and cook until crisp, once its crisp, take the bacon out and let it drain on a plate with a paper towel. DONT throw the grease away, now you want to take the onion and the garlic and cook on med high heat to carmelize the items. Once its carmelized, now the fun begins, add the brown sugar, the vinegar, the maple syrup and bring to a boil, once its boiling,turn down and add bacon. You will now let it sit on simmer for approx. 20 min. Once the 20 min is up, it should be almost a jam consistency. Now add the diced heirloom tomato and mix thoroughly.
Step 4 Red Pepper Mayo
take the diced red pepper and mix with the mayo, (its a simple step)
Step 5 cooking the patty and wrapping it in the weave
take the patty out and let it get room temp, bout 5 min or so. Cook the patty three quarters the way through,(trust me) med high heat. Once the patty is cooked three quarters, take it off heat and set it right in the middle of your perfectly prepped bacon weave. Now enclose the patty by wrapping it all the way up, no part of the patty should be showing. Place the patty back on to the pan with the bacon ends, the side where all the ends come together and place that side down. Cook until bacon is crisp(3 to 4 min). Now flip the burger and do the same. Once cooked set on a lined paper towel plate to drain
Step 6 Frying the pickles
take the pickles and drain thourough, now take the milk and add the eggs, you are going to make a milkwash. Take the grease and get hot, once the grease is hot and melted, your going to start the frying process. Take the pickles and dip into eggwash and then cornmeal, you want to add two tsp of the apple wood rub to the cornmeal. Fry the pickles until golden brown and crisp(about6 min)
Step 7 assembly process for the Dish
take the cronut and split in half, take the bacon wrapped brat patty and place on the bottom half. Now top it with a pinch of cheddar and a spoonful of the heirloom tomato bacon jam. The top bun, spread the red pepper mayo on it. then put on top of the monster brat bacon burger.Add the pickles on the side with your favorite dipping sauce and enjoy!
